About
Welcome to SALT - Boulder, a culinary gem nestled in the heart of Boulder, Colorado, at 1047 Pearl St. This beloved establishment has carved out a reputation for itself as a leader in the farm-to-table movement, uniquely combining sustainability with culinary creativity. The welcoming atmosphere invites guests to indulge in a menu that boasts a thoughtful selection of dishes, all prepared with an unwavering commitment to quality.
As I explored the offerings at SALT, I was immediately drawn to their intriguing starters. The delightful Beignets, dusted with powdered sugar and accompanied by honey butter, are a must-try for a sweet start to your meal. Meanwhile, the Brussels Sprouts with agave sriracha lime glaze and beet hummus stand out as a vibrant and flavorful option, perfect for sharing or savoring alone.
But the star of the show may very well be the brunch entrees. Picture this: the indulgent SALT Benedict, featuring poached eggs atop toasted English muffins with Beeler's ham, lavishly drizzled with hollandaise sauce and paired with crispy lyonnaise potatoes. For those with a preference for vegetarian options, the Local Hazel Dell Mushroom Benedict promises a unique twist with its crispy polenta base.
Even better, the standout reviews reflect SALT's dedication to service. Customers rave about their experiences, citing not only the exquisite flavors but also the attention to detail and warm hospitality provided by the staff. Maryanne Ciaraglia’s praise for the delicious Gnocchi Bolognese and seared tuna exemplifies the kitchen's commitment to culinary excellence.
The commitment to quality extends beyond the plates at SALT. As Cynthia Sass points out, the restaurant excels in offering grass-fed Wagyu and locally sourced organic produce. This foundation enables their chefs to express culinary creativity inspired by fresh ingredients.
Moreover, SALT's fully stocked bar features cocktails crafted with care, perfect for enhancing any meal. Emma Bauer reflects on the exceptional espresso martinis, while Brittany Van Atta notes the team's thoughtful service, from refreshing mussel bowls to ensuring a clean dining experience. It is these small touches that elevate the entire dining experience to something truly memorable.
In conclusion, SALT - Boulder is more than just a meal; it’s an experience. Whether you’re enjoying a lively brunch with friends, an intimate dinner date, or simply indulging in innovative cocktails, the ambiance, quality of food, and commitment to service make it a standout in Boulder’s vibrant culinary scene. “ Fantastic service, food, and super fun atmosphere. Gnocchi Bolognese was delicious and the seared tuna was wonderful. Menu has many different choices but not overwhelming. Highly recommend. ”
“ Love this restaurant! One of the highly understated gems of Boulder, walking the walk of the true farm to table experience. They go above and beyond with their commitment to serve only the highest quality sustainable meet and produce - nowhere else in Boulder have I found grass fed Wagyu (didn’t even know that was a thing!), Then there’s the locally sourced, organic produce, served up with true culinary creativity by a warm, welcoming staff. This isn’t a Boulder institution resting on their laurels, it’s truly a restaurant that’s stood the test of time and only getting better! ”
“ Great place to grab dinner with some friends and family or a date. A little pricey but average for Pearl St and worth it for the service and atmosphere. I recommend the dark chocolate SALT tart. To die for!! Espresso martinis are also excellent. ”
“ Besides the food being delicious, we appreciated all the little things like the waiter switching out our bowl of mussel shells when it got full, or making sure the table was clean and that we had fresh silverware. Simple but thoughtful! ”
“ My partner & I had such a wonderful date night this evening. Evan the bartender was so personable & excited about the mixology & exploration within the drinks offered. We had the pesto muscles paired with a delicious Caesar salad. Our experience could only be compared to the external happy dance one does when flavors &/or moments hit the spot & no words can describe. We send our love wholeheartedly. Thank you, Salt staff. Xoxo ”
“ Definitely make reservations! The food was so delicious I literally shivered on the first bite. The service was excellent. It was a beautiful day and outside seating would have been wonderful. We were seated in the downstairs area which was intimate and cozy. I had the angus filet and my husband had the sirloin. Both were some of the best steaks we’ve ever had. ”
“ Can’t wait to go back! Food and service (thank you Annabelle) were fantastic. Annabelle made some strong recommendations including the salmon which was incredible. We started with the palisade peach salad because we heard about palisade peaches and had to try them. There’s a lot going on with the salad. My husband and I split the salmon and a tavern burger. The burger was fine but I’d try something more creative next time. Wines by the glass were reasonably priced with good, global options. We ended with the vegan carrot cake which we really liked. If chef added a little candied ginger to the plate, it would be exceptional. We sat outside and enjoyed the people watching but the inside looked comfortable and fun. ”
“ Best dinner out in quite some time. Food, ambiance, and service were exceptional. The entire experience was lovely. We thoroughly enjoyed every moment of our dinner!!! Nick was one of the most exceptional servers that we've ever had. All his recommendations were perfect!!!! Thank you for such an excellent dining spot!! ”
